Butternut Squash and Potato Mash

Mash potatoes are undoubtedly a fan favorite. This dish goes great with turkey, chicken, or beef. However, some people prefer mashed-up squash. The good news is you can put the two together to complete a tasty, healthy meal. For this recipe, you need the following ingredients:

  • 8 cups of cubed, peeled butternut squash
  • 4 cups of cubed, peeled potatoes
  • 16 garlic cloves, peeled
  • 2 tablespoons of sesame seeds
  • 1 teaspoon of ground cumin
  • 1 cup of shredded Colby-Monterey Jack cheese
  • 2 tablespoons of butter
  • 1 1/2 teaspoons of salt
  • 1/2 teaspoon of pepper

Start to assemble the ingredients. You will begin by putting the squash, potatoes, and garlic in a Dutch oven. You will then add enough water to cover the items. Cook the potatoes, squash, and garlic uncovered for about 15 minutes or until they are tender.

At the same time, in a small dry skillet, toast the sesame seeds and cumin over medium-low heat. Do this for three or four minutes, stirring frequently. Remove this from the heat and then drain the squash mixture. Mash the vegetables and add the cheese, butter, salt, and pepper. Lastly, sprinkle the sesame seed mixture on top.
